A healthy and tasty breakfast for kids, by mommy Jenna

As mothers, we all know how picky can kids be sometimes and we always try to come up with various food ideas to satisfy their demanding taste. Mommy Jenna from Boca Raton, Florida is a great cook and pastry baker in her kitchen. So, I asked her to suggest me a healthy and tasty breakfast recipe for kids. Irish steel cut oats cooked, is one of her favorite recipes and she often prepares it for her daughter. We tried it as well and we loved it! “You can play around with this recipe and change it up during the week with different add ins”, she says.

Jenna’s base recipe is:

-1 cup of steel cut oats

-1.5 cups of milk

-1.5 cups of water

-Honey or maple syrup

-A spoonful organic creamy peanut butter

-Half a banana or any other fruit you prefer

-1/2 teaspoon ground flax seed

-2 cinnamon sticks

-Salt

Preparation:

-First, bring the milk and water to a boil, then add some salt (to your taste), and the cinnamon sticks. After, add the oats. Then turn the heat down to a simmer (medium-low). Let it cook until it’s creamy, about 20 minutes.

-Next, add in a little honey while it’s cooking to sweeten it or top with fresh maple syrup.

-Then mash in the banana and the peanut butter.

-In addition, stir in the flax seed for extra omegas.

You can also make this recipe in an instant pot (pressure cooker) and just add the milk, water, oats, maple syrup or honey and cinnamon (powdered). Then set it and forget it.

Only four minutes on high pressure.

More tips from Jenna:

-Sometimes, she adds in some chopped apples to the pressure cooker and makes an apple pie oatmeal (adding a touch of brown sugar or even better maple syrup, because it’s healthier).

-Or steam or stew some apple pieces separately and make it on the stove.

-During her daughter’s first year, she would mix a different nut butter in every day. Thus, she would get exposure to all different nuts, in order to prevent nut allergies. “This is an easy way to give babies the exposure they need”, she says.
