Ingredients:
350g. Farina Flour (self-raising flour)
400g. Sugar
200g. Strained Yoghurt
200g. Butter at room temperature
4 eggs
Zest of 1 medium lemon
1/2 medium lemon juice
1teaspoon cinnamon
1teaspoon ginger
Method:
-First, beat the butter with a hand mixer, until it becomes smooth.
-Next, pour the sugar and beat it to make an even mixture.
-Gradually add the eggs, cinnamon, ginger, lemon zest, lemon juice and then the yogurt.
-Finally, add the flour, sieving it and mix with a spatula until it is well mixed.
-Pour the mixture into a non-stick cake tin, smooth the top and bake on the middle shelf, in the air, at 356 degrees (Fahrenheit) for 50 minutes to an 1 hour.
At the end, insert a skewer into the center of the cake – it should come out clean and dry. That way you will know the cake is ready!
Let it get cold for 15 minutes before serving it.
