As a mom, you know how demanding it can be trying to come up with new food ideas for school, every single day. Thus, after experimenting with several recipes in my kitchen, I came up with 10 nutritious, salty and sweet snack ideas for school. Also, the best part is that my children who are picky enough with food, approved all of them! That is such a great relief! In addition, you can prepare them from the previous day in order to have them ready the next day. Their texture does not spoil at all, on the contrary, they become tastier. These snack recipes will literally untie your hands!
- French toasts in the oven (2 servings)
Ingredients:
-4 slices of toast bread from a bakery (less preservatives). Prefer whole grain or low glycemic index bread.
-3-4 medium eggs
-3 tbsp olive oil
-Grated mozzarella (optional)
Directions (the morning before school):
-First, in a bowl, beat the eggs with an egg beater adding the olive oil.
-Second, dip each slice of bread in the egg and then place them one by one on a baking pan, with a baking sheet.
-Then add the mozzarella on top if you like and put the pan in a preheated oven to 180 degrees (Celsius), in the middle rack for 8-10 minutes. Be careful not to dry them too much.
I usually cut them into small square pieces and put them into a lunch box to make the consumption easier. You can accompany them with fresh blueberries or cherry tomatoes with small mozzarella cheese balls.
- Pie with feta cheese and oats (2 servings)
Ingredients:
–125g oats
-250g mashed feta cheese
-4 medium eggs
-4 tbsp olive oil
-Sesame and pepper
Directions:
-First, in a bowl, beat the eggs with an egg beater.
-Second, add the feta cheese, oats, oil, sesame and pepper.
-Then mix well and knead the mixture. It should be neither too wet nor too dry. If necessary, add a little extra oats.
-Next, flour a square pan or put inside a baking sheet and then, spread the mixture evenly with your hands.
-Bake for about 20-30 minutes, in the middle rack, in a preheated oven to 180 degrees (Celsius). I also put it in the air.
Accompany it with cherry tomatoes and sliced cucumber or grapes. This is one of our favorite snack recipes.
- Small pancakes with banana and honey baked in the oven (12 servings)
Ingredients:
-300g self-rising flour
-250g strained yogurt
-3 medium eggs
-4 full tbsp honey
-2 ripe diced bananas
-6 tbsp sunflower oil
Directions:
-First, beat the eggs with a mixer on medium speed.
-Second, add the honey, yogurt and sunflower oil.
-Then, gradually add the flour.
-Finally, add the banana and mix well.
-With a tablespoon, take a full amount of the mixture and place it on a baking pan, with a baking sheet. Place the uncooked mixture about 2 inches apart from each other, because the pancakes will expand as they bake.
-Bake in a preheated oven to 180 degrees (Celsius) in the air, in the middle rack for 15 minutes.
Accompany them with blueberries or raspberries. Also, if you wish, you can spread a little chocolate on the top. It is the perfect snack for school that children will love.
- Cupcakes with broccoli and mozzarella (12 servings)
Ingredients:
-300g self-rising flour (gluten free)
-3 medium eggs
-250ml kefir milk
-6 tbsp sunflower oil
-250g boiled broccoli (tassels only-finely chopped)
-250g grated mozzarella or gouda
-1 tsp sesame, 1 tsp salt, 1 tsp sweet paprika
Directions:
–First, in a large bowl, put the eggs, kefir milk, oil, flour and beat it all with a mixer, until an even mixture is formed.
-Then, boil the broccoli for 5 minutes and drain it very well with absorbent paper. Next, chop it finely.
-Pour the broccoli, grated mozzarella, sesame, salt and paprika into the mixture that you prepared and mix well with a spatula.
-Then, flour cupcake pans and with a tablespoon add the mixture into each tray. Fill it up to the middle, because they will rise.
-Bake in a preheated oven to 180 degrees (Celsius), in the middle rack, for 25-30 minutes. Dig a toothpick in the middle of a cupcake to check if they are ready. If the dough comes out damp, bake them a little more.
The low humidity that the cupcakes will have from inside after baking is due to the broccoli and is normal.
Accompany them with cherry tomatoes and sliced cucumber.
- Delicious apple-orange cake
Ingredients:
-5 medium eggs
-280g brown sugar
-260ml sunflower oil
-215ml whole milk and 215ml fresh orange juice
-2 tsp orange zest
-2 vanilla powder
-500g self-rising flour (gluten-free)
-2 large apples cut into cubes
Directions:
-First, beat the eggs with the sugar well until fluffy (I use mixer)
-Then add the milk, juice, oil, zest and vanilla. Continue beating.
-Gradually, add the flour stirring it and after turning off the mixer, add the chopped apples. Mix with a spatula.
-Then, flour a round pan and pour inside the mixture.
-Bake in a preheated oven to 180 degrees (Celsius), in the middle rack for 45 minutes to an hour. Dig inside the cake a toothpick to check if it is ready. If it comes out damp, let the cake bake a little bit more.
- Homemade Greek bagels (12 servings)
Note: the execution of this recipe is a bit time consuming, however, the bagels can be stored in the freezer for up to a month and are ready for consumption 15-20 minutes after leaving the freezer.
Ingredients:
-500g all purpose organic flour (alternatively you can use Zea flour)
-50g olive oil
-8g yeast powder
-2 tbsp honey
-220ml hot water
-For the sprinkling (3 tbsp honey, lukewarm water, sesame seeds)
Directions:
-First, in a large bowl pour the yeast, honey and 50ml of hot water. Stir and let it sit to activate the yeast.
-After a while, add the flour, olive oil and the rest of the hot water. Mix until you get a soft and workable dough.
– Then, cover the bowl with a transparent film and a towel on top. Dough needs a warm place to rise.
-After, when it rises, divide it into 12 small balls. To prevent them from sticking, place them on a baking sheet.
-Next, place the sesame seeds on a plate and the lukewarm water mixed with honey in a medium bowl.
-Then, start to form sticks of the same length. Join the edges to form round bagels, then quickly dip them one by one first in the honey water and then in the sesame. Keep your hands dry constantly, so that the dough does not dissolve.
-Meanwhile, place them on a baking tray with a baking sheet.
-Bake for 20 minutes in a preheated oven to 200 degrees (Celsius) in the air, in the middle rack.
-After they cool, wrap them with a transparent film and keep them in the freezer. When you take them out of the freezer, leave them in a room temperature for 15-20 minutes and they will be as fresh and crunchy, as they were on the day they got baked.
Accompany them with cream cheese and cherry tomatoes.
- Soft cookies with peanut butter, banana and oats (10 servings)
Ingredients:
-170g oats
-1 full tbsp peanut butter
-2 ripe bananas
-2 tbsp organic brown sugar
-1 tbsp sesame
-70g couverture chocolate (for decoration)
Directions:
-First, put the oats, peanut butter, sugar, sesame and melted bananas in a big bowl.
-Second, mix all the ingredients well with your hands, until a uniform dough is formed.
-Then, make 8 medium balls and place them on a baking pan with a baking sheet. Press them lightly with your hand to flatten them.
-Bake in a preheated oven to 170 degrees (Celsius), in the middle rack for 15 minutes, not more. You can also use air.
-Next, take them out to cool.
-Meanwhile, melt the couverture in a bain marie. Then, with a small spoon take a small amount and pour it slowly and carefully on each cookie, forming lines.
-Then, put the pan as it is in the fridge for 20 minutes, until the couverture hardens.
You can store the cookies in sealed plastic box for 3-4 days. This one is one of my favorite snack recipes too.
- Quick homemade crepes (10 servings)
Ingredients:
-245g all purpose flour
-460ml milk (alternatively use almond or coconut milk)
-1 large egg
-3 tbsp olive oil
Directions:
-First, in a bowl, beat the eggs with an egg beater.
-Then, add the milk and olive oil and continue beating.
-Next, sieve the flour and gradually add it into the liquid mixture, mixing it until it is even.
Caution! It should not come out too watery.
-Then, heat a non-stick pan of medium size very well and spread it with a small amount of oil, using a cotton ball.
-Next, fill a deep tablespoon with the mixture, throw it in the pan and with very fast circular motions try to spread it around.
-Once the crepe acquires a golden color, turn it with a plastic spatula on the other side.
-Repeat the same process until the whole mixture is finished.
Accompany them with peanut butter and sliced banana or spread chocolate and fresh blueberries. Crepes is one of the snack recipes I was making since I was a kid.
- Soft cookies with ricotta cheese and honey
Ingredients:
-1/2 kg ricotta cheese
-1 tsp cinnamon
-450g all purpose flour
-1 vanilla powder
-3 medium eggs
-1 tbsp vinegar
-50ml olive oil
-1 tsp baking powder
-250g honey
-Blueberries (optional)
Directions:
-First, in a bowl, beat the eggs with an egg beater.
-Second, add ricotta cheese, honey and olive oil and mix well with a spatula.
-Then, add the cinnamon and vanilla. Pour the vinegar on the baking powder and when it foams, add it into the mixture. Then, stir.
-Gradually, add the flour and continue mixing. Meanwhile, add the blueberries.
-Start shaping balls 2-3 cm. Place them on a baking pan with a baking sheet. Then, press them lightly so they widen. The dough may be sticky, however, it does not matter. That is how it should be. You can flour your hands if it bothers you, until you are done.
-Bake in a preheated oven to 180 degrees (Celsius), in the middle rack for 30-40 minutes. This is one of my grandmother’s snack recipes.
- Soft spinach pie (6 servings)
Ingredients:
-1 kg ricotta cheese
-4 medium eggs
-300g grated mozzarella cheese
-1 tsp baking powder
-8 tbsp all purpose flour (not full)
-500g boiled spinach
-Olive oil
Directions:
-First, in a bowl, beat the eggs with an egg beater.
-Second, add the flour, ricotta cheese and baking powder. Then, mix them. The dough will come out like a thick yogurt.
-Next, grease a pyrex dish with some olive oil and place inside half of the dough evenly.
-Then, sprinkle the grated mozzarella on top and put the spinach (which first has to be drained very well).
-Finally, pour the rest of the dough and spread it evenly everywhere.
-Bake in a preheated oven to 180 degrees (Celsius), in the middle rack for 45 minutes.
